When Bill Collison’s Sussex greengrocers was wrecked by a flood in 2000, he was forced to start again, this time adding a cafe, which grew into a restaurant. The business was bought by Côte Restaurants in 2008, which demerged it four years later. Now majority-owned by the retail and restaurant entrepreneur Richard Caring, 68, Bill’s has more than 75 restaurants and an online shop. Chief executive Mark Fox, 47, joined from Starbucks last year, just as profits hit £8.4m.
